My roots are in Spain and Madagascar, but my home is in Switzerland. This diversity is also part of my daily professional life. Free diving is the way I find my calm and focus. And these are precisely the qualities that characterise my work as team leader. Taking responsibility and being there for each other are key factors in this regard. At Trattoria Sempre, Italian tapas entice you to share and discover, while the ambience radiates Italian zest for life.

My journey began over ten years ago in Italy, where I discovered a love of Italian cuisine while working as sous-chef. After that I moved on to London, where I got to know not just Italian cuisine but also Asian and British cuisine in all their diverse forms. I have been in Switzerland since January 2024 and I have been part of the Bindella family since April 2024. Now I am here at Trattoria Sempre – and ready to show what real passion on the plate means.
For me, cooking is more than just a job – it’s my way of telling stories. Stories of a sunny tavolata on the Italian coast, of modern and urban cuisines and of the art of combining flavours to create something truly new. What do I strive for? To create the very best from fresh ingredients and to wow my guests with every dish.
